If you ate 2 devil fruits then the 2 devils would fight and you explode into nothing. There has however been a single case of someone able to eat more than 1 devil fruit and that is Black beard having the Yami Yami no mi (Dark Dark fruit) and the Gura Gura no mi (Quake Quake fruit).
